[DOCS] Repair non-working API call links and quickstart instructions #83

Closes #79 changed four example api call domain in the URIs in the docs' api section from eddiehub.org to eddiehub.io also repaired the duplicated lines in the quickstart instructions section that appeared there today or yesterday (see screenshots)

I also changed the EddieHub discord invitation link from 'http' to 'https'
