Build on Ubuntu 20.04 instead of latest #41

Fixes issues with glibc on older (pre-2.33) systems.

e2es pass on my end with properly configured tokens - maybe this one's expired?

It’s because CI doesn’t use tokens, I need to fix this but not sat down to do the work. Basically we need to be able to pass “GITHUB_TOKEN” to the frontend when running e2e tests
