Hair
Hair in medieval is described and depicted as "elaborately curled". A quote from this article:
Among the higher classes in very early times great care was bestowed on the hair; its regulation constituted quite an art; and it was dressed up in several ways. Very often the long hair of men, as well as of women, was elaborately curled.
Similar examples can be found on the linked Wikipedia page in high resolution. Curly hair is represented in the game, but it seems to be naturally curly hair, rather than the carefully styled hair described in the literature.
Another example reproduce from the Book of Kells
The hair is described as "commonly divided [...] into slender fillets or locks, which sometimes hang to the eyes in front". This is the case for both men and women.
The best modern examples of this that I can find are in afro hair, though I imagine the Irish versions wouldn't be as tight.
often worn forked, as depicted in the various Irish tales and artwork. other styles show one single unforked beard, sometimes with a square cut to the bottom.
Historical example of a forked beard (right), from bronze figures on the Shrine of St. Maidoc (13th century).
Interestingly, it seems that beards often grow forked naturally as a genetic trait. Beards were also often elaborately dressed/curled. Here are some more modern examples of forked beards. Searching "forked beard" on YouTube also turns up some useful references.
This sculpture might be a good reference since it has multiple angles.
Some examples of square cut beards(these are surprisingly difficult to find real life pictures of):
