Consider tag-based release process

Is your feature request related to a problem? Please describe.

We'd like to analyze and possibly switch from the main branch-based deployment approach to a tag-based release approach, which would ensure that the release is always done from a particular commit, which the main branch-based approach does not guarantee.

Describe the solution you'd like

• Update deploy-release.yml, but keep deploy-snapshot.yml as is
• Update the Github trigger settings as well
