Specify pydantic version in setup.cfg #70

aiida-core v2.5.0 started to depend on pydantic v2. Does this package need v1 or v2? In any case it should be specified in setup.cfg in order to avoid breakage during install, once we update the AiiDAlab image with aiida-core 2.5.0, see https://github.com/aiidalab/aiidalab-docker-stack/pull/424 (this might take a while, since there are other dependencies that need pydantic v1)
