Please do this Ange, this is a cool idea. It would be good for putting engine sounds into games like Beamng as well.
You can go to the wiki and go to "Community Projects" and click on "Engine Sim Recorder". This will take you to the recorder GitHub and just download it from releases. Warning ⚠️ It requires modloader which can also be found at the wiki of the engine sim repository. Hope this helps you

Windows usually does not allow recording what the soundcard plays (silly restriction), but on Linux you have full freedom to do whatever you want, just not having to play cat and mouse with Microsoft is worth it using Linux.
So what I'm saying is on Linux all you do is you run engine simulator, use any audio tool and just select the source of the source and you can record it, very simple, no additional functionality needed.
Not sure if this is already a thing, but it'd be cool to take your current engine and render some .wav loops from it. You just tell it how many loops to make, what RPMs to loop at, as well as the throttle input for each one. For example, if I needed a 0% throttle idle RPM loop, then a 100% throttle 8000 RPM loop, and then a 0% throttle 8000 RPM loop. Or more if one needs them.
This is especially useful for some people as their hardware isn't capable of running this smoothly, especially with other engines like V8s, so this would allow people to get some sounds recorded by rendering them ahead of time instead.
