Specify `-Z unstable-options` in README #163

@ZuseZ4 Following up on our conversation in https://github.com/EnzymeAD/rust/pull/156#issuecomment-2284876823 and in the Differentiable Programming Discord, this PR modifies the README so that its commands should now work without any additional modifications.

As I was hoping for, updating to the latest nightly fixed this, thus closing.
