Add documentation on ErgoDox Gamepad as a variant #59

@profet23 Added the ability to use a left hand only ErgoDox as a gamepad: https://github.com/Ergodox-io/ErgoDox/pull/1

Add documentation on the variants section with some instructions on how to build it.

Other possible nicknames: LeftyDox G-PaDox

Instructions should be implemented on how to build the Gamepad variant. Build instructions provided by @profet23 here: http://imgur.com/a/zog7Z with his permission to include them on the site.

@profet23 Thanks again for the hard work on this, I've implemented a pretty quick and dirty addition, let me know if you want to see other changes or improvements
