Add Valkey to compatibility test in CI #45

Add Valkey 7.2.5 to our compatibility tests in CI.

Additionally the redis versions are revised and the workflow renamed (in separate commit for review purposes).

Updated to run on the first stable release of Valkey 7.2.5.

The renaming of the file is in a separate commit, so diffing commits should work.
