Replace placeholder pub pdfs with templated pubs

What does the PR accomplish?

• We had previously uploaded unstyled placeholders of our Digital Coercion and Ethical Collaboration papers.
• This PR replaces them with the nicely styled versions!

Getting there

• Learned a ton about InDesign!

What I need from a PR review

• Navigate to https://deploy-preview-129--ethicalsource.netlify.app/publications/ and check out both of the publications
• Click to view the PDF version
• Double-check that the formatting looks okay and is consistent
