Adopt `movement` Xarray data format

movement has a very interesting Xarray data representation standard, which I believe we should adopt. This would allows us to:

• simplify our current data handling pipeline
• keep metadata together with data
• seamless integrate multiple pose estimation formats.

This should simplify the fixes for:

• 89

• 96

• 100
