[x] fix functions definitions arguments
[x] fix functions call arguments
[x] add basic readme for running demo
[x] add force update to config file in demo
[x] add pose estimations list to project init to avoid the necessity of user interaction (copying and pasting csv files to the right folder)

Idk yet, the pipeline still running on my computer (epoch 350+) hahah. Waiting the run finish to validate the last methods of the demo evaluate_model and pose_segmentation. Do we have a faster way to test?
