Escape double quotes #2

escapes double quotes before sending to tmux
replaces single quotes with double quotes (sorry that was my nvim formatter...) -please squash the commits, i was just messing around as i have been only using neovim & lua for a few hours now. i just modified stuff here to see if neovim is actually loading my plugin...

I went ahead and rolled some of the ideas from this PR forward into https://github.com/EvWilson/slimux.nvim/pull/3, so I'll be closing this PR out to work on the expanded base there. Thanks again for bearing with me!
