QA testing enhancements #8

Added readonly replica to cluster
The single node tests can now be run against:
- single node or a cluster (via docker compose)
- Any ES docker image tag
- LogV2 or V3

Configured via environment variables

ES_USE_CLUSTER (default: false)
ES_DOCKER_TAG (default: ci)
EVENTSTORE_DB_LOG_FORMAT (default: V2)
