Currently, the map editor Lönn make use of the bundled love binary provided by Olympus, it's hardcoded there : https://github.com/EverestAPI/Olympus/blob/da74a02231ca43c0edd39f08b5a68ac276b1b444/sharp/CmdLaunchLoenn.cs#L16C1-L20C56 As a result Lönn doesn't launch when you want to use it with a system-wide love install (with the love bundle removed).
