feat: add logs to support xud-docker-api setup-status #771

This PR adds some logs to reflect the progress of the setup. It is used in xud-docker-api endpoint /api/v1/setup-status which is used to display more setup details in xud-ui.

How to test?

bash xud.sh -b setup-status --proxy.disabled false
curl -k https://localhost:18889/api/v1/setup-status
