Describe the problem:
Only the shadows of the opponent's vehicle gets displayed, sometimes their
car flickers off, but most time it remains invisible.

what is your ScreenUpdateSetting in mupen64plus.cfg file?

Could you post it there?

If you mean the one in ~/.config/mupen64plus/mupen64plus.cfg, it's
ScreenUpdateSetting = 1
which is the default value. Setting it to any other value resulted in no change 
or
made it worse (5)

Have you tried a different video plugin? Mupen64plus comes with arachnoid, 
glide and rice.

Glide seems to work the best for me (Still a few muckups though)

$ mupen64plus --gfx mupen64plus-video-glide64 XXXX.z64
