Migrate to upstream postal docker image #139

Our postal docker image is outdated for over 3 years now .

It's forked from elct9620/docker-postal which forked it from CatDeployed/docker-postal. But it looks like CatDeployed is no lacking commits but is still maintained while elct9620 is not.

Also in the meantime maybe the additional configuration that we need can me solved otherwise (either with an init script like done with rabbitmq) or via container setup.
