Update read_species_from_config to Support Nested Config Format #30

Changes:

Refactor read_species_from_config to accommodate nested species_of_interest entries in the config YAML.
Modify logging to display species names only, omitting Tax IDs.
Update species_list to contain species names only, without Tax IDs for downstream processing.
