Remove link checker #63

Removes the link-checker action which was discussed in this MR

I opened an issue for broken link checker so we can wait a bit to see if we get an answer: https://github.com/stevenvachon/broken-link-checker/issues/261

Seems it will take a while before we get feedback about why broken-link-checker fails, so let's remove it while waiting, worse case we just add it back later
