As with Gnome Terminal, I will take a look and fix for the next update, but I think you can check the icon pack, I haven't used Gnome LaTex, I don't know if you can change the icons from the program itself, but I think you should try some icon pack with support for dark themes.

Anyway, I'll take a look and fix any problems for the next update.
