Fix theme following org name change #235

Description

Update paths to use @flowfuse
Use OS agnostic path join
Add basic test that ensures directories exist and the package IS @flowfuse/nr-theme

UPDATE:

Fixes Node14 (and Node <= 16.6) tests by adding support in the utils lib for copying a directory recursively
