For PDF and Doc export, is it possible to change the page orientation from LETTER to LANDSCAPE?

You should be able to do so by providing a custom template that is configured with landscape. Please take a look to the online demo for how to provide a custom template. The pdf is created from the docx, so just by providing a custom template for the docx it should change the page orientation for both formats.
