need better pdf reader/ocr [FEATURE] #780

the document loader(pdf) is not accurately reading pdf, need to have an better ocr to be added along with pdf loader, something like document ai

agree +1. it be best for Flowise to adopt Unstructured lib for superior pdf/doc ingestion.
