But then you'll be stuck with 2000 accounts...

I found a workaround to this issue:

Delete /wm-class:"${FULL_NAME}" from $HOME/.local/bin/winapps
Ungroup the program in your Taksbar

I was surprised to find that this issue occurs on Ubuntu 20.04 LTS, even despite winapps setting the wm-class to a different value for each application. I am using the default GNOME taskbar.
