Dough

Steps

A

  1. Combine the all purpose and bread flours, sugar, salt, and instant yeast
  2. Blend the silken tofu, plant milk, and vinegar together
  3. Add this to the dry ingredients and mix together until the dough is shaggy.
  4. Knead the dough for 5 minutes.
  5. Add the vegan butter, a couple tablespoons at a time.
  6. Knead for another 15-20 minutes to develop the dough.
  7. Place dough into a lightly oiled mixing bowl and turn the dough to coat in oil.
  8. Cover the bowl and let rise at room temperature for 1 hour
  9. Place the dough in the fridge and refrigerate over night.

B

  1. Grease pans with vegan butter.
  2. Divide it into 2 equal pieces to make 2 loaves of bread.
  3. Shape dough into desired shape like braid or segments or whatever.
  4. Preheat oven.
  5. Let loaves rise
  6. Brush them with egg wash.

C

  1. Bake for 30-35 minutes 150 ºC or so.
  2. Remove the loaves from pans
  3. Let cool before cutting!
