Fix + breaking: Change textType='text' and updated schemas and types …

…accordingly to allow users to use letters in the street number section e.g. 1a

• Change: type="text" in step 1
• Change: seed.ts streetNumber is now a string
• Changed every mention of streetNumber to string, incl. prisma.schema file
• Create: new migration for prisma to use

It's a rather big commit, but everything needs to be committed together as it all depends on each other.
