@carrotstien perhaps you can consider a slightly larger imaginary table according to which the AI moves and strikes? If the ball hits the imaginary extension but misses the real table, the AI will move and try to take the shot and fail because the ball fell down.
That is exactly the plan

When you return a shot, from the instant it leaves your paddle, if it's going out the AI doesn't respond (well his head tracks the ball, but that's it). If your shot is going in, the AI starts to move.
Trivial issue in itself, but does lean into discussion about the AI generally, simulation of reaction time etc. I've seen the AI land some insane returns where the ball hits the edge of the table and it's just magically where it needs to be, with no last minute adjustment like a human player :)
