docs: split README.md such that each sub-library has its own README.md #17

I noticed while publishing the initial versions of the 3 libraries that each one shows an empty README in the NPM UI.

This commit fixes that problem by splitting the README content, such that there is a README for each sub-library with the usage examples relevant to that sub-library, in addition to the top-level README that has high-level information about the project and why it exists.
