refactor: change role object of user to list of role objects

DESCRIPTION

The role property of the user object changed from a single role to a list of roles, so the user can now have multiple roles.

The following changes have been made:

• Adjustment of the user types (UserInput, UserOutput, UserUpdate)
• Adjustments in UserForm, UserTable and ProfileView.

• [ ] update docs
• [x] pull main & resolve merge conflicts
• [x] check Vercel deployment
