Fix Centos7 support
Add support for Centos8, Rocky8 and Rocky9

Now the CI is happy again.

Would you mind adding Centos9?

I would also recommend using the CentOS repository on quay.io.

@ikerexxe We dropped CentOS after the mess RedHat have made. You can use Rocky Linux 9 packages instead.

@jpereira we need to still include CentOS 7, it's (sadly) still supported. It's been building there for years so I doubt much needs fixing, looks like it just needs a recent git package, though I'm not sure why git needs upgrading at all.
