Added initial refactoring for MediaMTX. #40

Video Server page has been updated to refer to MediaMTX links and verbiage now, as well as general cleanup of the document.

I do need someone with a Windows machine to add the equivalent screenshots of MediaMTX release page and file copy.

I've also cleaned up the formatting on the socket troubleshooting page.
