Are you using a touch screen? If not, you could use the pre-existing quit option in the menu bar (always visible on macOS, hidden until you press ALT on Linux and Windows) or activate it with the CTRL/COMMAND+Q keyboard combination.
I'm curious why exiting the application normally is undesirable for you?
I'm using on Batocera via Flatpak for a TV Box. Freetube is working well, but by default loads fullscreen with no menu bar or top bar. These need to be activated through key presses like you mentioned (possibly could be automated with Bash). Even after activated its not particularly friendly to close due to size of the menu / cross and using an air mouse.
Understand this is possibly a limited use case.
A 'Quit Freetube' button intuitively looks like it would fit well at the bottom of the hamburger menu.
