Replaced app/config/config.yml by config/packages/fos_ck_editor.yaml : correct place in current version, and tried. See https://symfony.com/doc/master/bundles/EasyAdminBundle/integration/ivoryckeditorbundle.html#customizing-the-rich-text-editor
