Fix broken `man` pages on Lix #13

I'm not sure why symlinkJoin isn't correctly propagating them, but it also does seem like they have a rather weird way of propagating them anyways. see https://git.lix.systems/lix-project/lix/src/commit/775292766025380d04004e42fefbdb8ca40b3fa3/scripts/nix-profile.sh.in
