Add more metrics reporting to the service #1445

We already have a fair bit of metrics being reported to Prometheus
However, now that we've sat on these metrics for a while, maybe it's time to add a bit more

Additional metrics

[ ] Counts for calls to Fuel Client (i.e., when fetching blocks)
[ ] Maybe add histogram timing to handle_events which would be binned (or "labeled") according to each indexer UID
[ ] Add metrics for indexer graph queries -- (i.e., count requests for data and bin them by indexer - in addition to keeping them in aggregate)
[ ] I'm sure there are other things that will come up :)
