WIP: updating completeness #381

This PR adds some updates to the calculation of catalogue completeness with the completeness analysis tool.

replaces some probability calculations with log probabilities to avoid numerical issues
changes to the norm calculation for poisson optimisation (should be more stable now)
adds new optimise options (not all of these should be kept)

To do:

starting norm depends on selection criteria (often we want this to be smaller, but this is not true for some of the options)
decide on norm options to keep
tests!
