This PR is a little different as we are merging into the gh-pages branch. This is necessary this time to update these docs with a release that has already happened but in the future the CI will take care of this automatically on a release.
I've not done version 1.0.1 as that didn't have any sphinx docs

Description
This PR retrospectively adds version 1.1.0 to the documentation as a tagged version which we can go back to.
It also sets 1.1.0 to the default page that gets loaded when someone visits the webpage at https://geouned-org.github.io/GEOUNED/index.html
