Update the build docs for a release #11

try to get release v3.3.0 out

I think I am going to enable pre-commit on this repo soon after we get a release, then we can get the formatting and some other things settled.

I do like that the ubuntu builds are working for unknown reasons, maybe we fixed it in 3.3 and didn't know it.

Eventually we should check if issue #3 (Linux segfault) has also been fixed.

the CI tests were the source of #3. We should still test on some other platforms when we get the chance though.
