Update to use jexl syntax in track configs #6

Some of the tracks currently have config callbacks, at least in the demo data

It appears to be that colourFunction callbacks are created in the codebase too, which may switch to jexl , or if it gets too complex, we may want to register custom jexl functions via the plugin
