Initial clean up of user stories #905

Fixes #886 (awaiting separate ticket for improving content)

Removes PDF user story examples (an HTML version already exists)
Edits link to PDF to point to HTML version instead
Removes Good Reads section that links to non-gov resources
Expands descriptive link text for accessibility
