docs: update authentication docs

Description

This PR updates the authentication docs to match changes in the Google Developer console.

Why

It took some trial & error for me to figure out how to translate these docs to match the new console, particularly because the "Other" application type is no longer in the dropdown.

How

I created a brand new project in the console and documented the steps, capturing new screenshots along the way.
