as of #446, the version of scikit-learn used by the base images has diverged from the version used to generate the official tutorial model (oops 😬).
This means that the tutorial is not runnable from any of the base images unless you have explicitly installed scikit-learn==1.3.1.
Acceptance criteria:
the official sklearn-seedling model hosted on our huggingface has been replaced with one trained/serialized using the latest version of scikit-learn
