Description

To get BLE pairing working on two devices all that was needed was to update the SDK version to 7.1.0

This PR brings improvements to our Bluetooth connection flow

TODO

[x] Add proper connection call back
[x] Add handling for random device unpairing events
[x] Documentation reflects the changes made.
[x] Provide Proof it's working

Changes Made

Updates to the bluetooth flow to make it more correct/stable
