Move default env to docker-compose.yml #8

This is one viable solution to issue #7

Alternatively, you could patch run_with_env.sh to not override already defined env variables. Which one would you prefer?

I will add another CI tool (not just DockerHub, because it has no tests) to check it is in fact working, do not worry, I have this in my list of tasks. Thank you very much for the contribution.
