Get a specific document based on UUID #10

As a user I want to be able get a document based on UUID, so that TBD

Acceptance Criterion:

[ ] Mimic the functionality of the FE gateway [code].
- Proper logging of errors to seperate file.
- Ensure API returns proper HTTP status codes with useful error code (we can use this to display error messages to the user).
[ ] Create unit tests ~80% code coverage.
