Duplicate 2021 folders #5

I have duplicated the contents of the 2021 folders to our new repo gmt-for-geodesy. Instructors should now update their folders as they see fit and make pull request to revise their content. I have finished mine already (animations).

Merging this in; each of you can submit your own PR for changes.

Be mindful of any GMT syntax updates that have taken place. I had to fix a few things in my animation scripts to comply with 6.4 documentation.
