Add coverage badge #28

Not totally sure how this works, but I think pytest-cov can run in CI and regenerate a specific file that stores this info, then it's referenced by the badge on docs/readme/etc.

We could also do things like require that PRs don't lower coverage but I think that's probably more trouble than it's worth.
