just install null keyboard Null keyboard and select it when using scrcpy

You could also use HID keyboard (scrcpy -K).

Press MOD+k in this mode to open the settings activity on the device, and disable on screen keyboard.

That's a bug on your device or in Gboard then.

Try another keyboard (like https://f-droid.org/en/packages/helium314.keyboard/ or another)
