Added documentation for running the InSAR workflow #349

This adds a more guide-like document I worked on earlier this week for running the InSAR workflow which describes the steps from nothing to running the workflow, and also how to check the stack after processing has started/completed with the reporting script.

Note: This references some other documents that will be in PR soon / but are not part of this PR (trying to keep them separate, one PR per big chunk of work) & ultimately replaces some of the readme.md (there's a PR coming for this too)
